Kabshah bint Abi Maryam (may Allah be pleased with her) said: I asked Umm Salamah (may Allah be pleased with her): What things did the Prophet (peace and blessings be upon him) use to forbid? She said: "The Prophet (peace and blessings be upon him) used to forbid us from making nabidh by cooking date stones, or by mixing raisins and dates."
The Shaykh said: The prohibition of cooking date stones is emphasised because it spoils the taste of the dates, and they are the food of domestic birds and animals, and their strength is lost once they are cooked.

Abdullah bin Ka'b bin Malik (may Allah be pleased with him) narrates from a woman (may Allah be pleased with her) that she heard the Prophet (peace and blessings be upon him) say: "Do not make nabidh by mixing dates and raisins; make each of them separately."
The Shaykh said: The prohibition of mixing the two can carry two meanings. One is that he (peace and blessings be upon him) forbade it merely because the two are mixed, whether or not it reaches the point of intoxication, and permitted drinking it when each is made into nabidh separately. The other is that he (peace and blessings be upon him) forbade it because the mixture becomes strong sooner, while each made separately becomes strong later; so as long as it has not reached the state of strength, in either case, it is not forbidden. And the narration that follows indicates this second meaning.

Sayyidah Aishah (may Allah be pleased with her) said: When nabidh of raisins was made for the Prophet (peace and blessings be upon him), some dates were added to it, and when it was made of dates, some raisins were added to it.

Safiyyah bint Atiyyah said: I went in with some women of Abd al-Qays to Sayyidah Aishah (may Allah be pleased with her), and we asked her about dates and raisins. She said: "I used to take a handful of dates and a handful of raisins, put them in a vessel and mash them, then give it to the Prophet (peace and blessings be upon him) to drink."

Sayyiduna Anas (may Allah be pleased with him) said that the Prophet (peace and blessings be upon him) forbade "mixing unripe dates and ripe dates to make nabidh and then drinking it", because when wine was forbidden, this was the common wine of the people.
This hadith shows that the reason for its prohibition is that it is khamr (wine), and khamr is everything that covers the intellect. On the basis of these narrations, it is recommended to avoid making nabidh by mixing them even if no intoxication has arisen in them, because the reports prohibiting it without qualification are established, and they are more firmly established than the reports of permissibility.
