Paying the Butcher as a Fee
It is narrated from Sayyiduna Ali ibn Abi Talib رضي الله عنه that the Messenger of Allah صلی اللہ علیہ وسلم commanded me to oversee the camels for your Qurbani and to distribute their humps and skins after the sacrifice, and not to give the butcher anything from them (as a fee). The Prophet صلی اللہ علیہ وسلم said: "We will give him his fee from our side (i.e., in the form of wealth)."

Reference: It has also been narrated by Bukhari 1716, then Muslim (1317 [3181]), and Ibn Abd al-Barr (Al-Tamhid 12/2 from the Hadith of al-Humaydi).
Jurisprudence:
➊ It is permissible to appoint someone as a deputy to slaughter or sacrifice the sacrificial animal.
➋ It is recommended to slaughter the sacrificial animal oneself.
➌ The hide and the offal of the sacrificial animal should be distributed among the poor and needy.
➍ It is not permissible to give the hide and offal to the butcher as payment.
➎ It is permissible to give money to the butcher as payment.
