Anas bin Malik (RA) is reported to have said that Allah's Messenger (ﷺ) had forbidden to mixture fresh dates and unripe dates and then drinking (the wine prepared out of it), and that was their common intoxicant when liquor was prohibited.

This hadith clarifies that it is not permissible to drink nabidh prepared from fresh and dry dates if it becomes intoxicating. This is why, after the prohibition of wine, such nabidh was discarded. This type of nabidh would be boiled so much that even the pits would dissolve, and then intoxication would develop in it. Its prohibition is mentioned in another hadith: Umm Salamah radi Allahu anha said: The Messenger of Allah sallallahu alayhi wa sallam used to forbid us from boiling dates to such an extent that even their pits would dissolve. (Sunan Abi Dawud, Al-Ashribah, Hadith: 3706) (2)
If the pulp of two fruits is mixed in such a way that it does not become strong (intoxicating), nor does the process of fermentation occur, then there is no prohibition regarding it. It is narrated from Aisha radi Allahu anha that nabidh would be prepared from raisins for the Messenger of Allah sallallahu alayhi wa sallam, and then dates would be added to it, or nabidh would be made from dates and then raisins would be added to it. (Sunan Abi Dawud, Al-Ashribah, Hadith: 3707)
